Spinach Salad
serves 4
*Zuzana uses tuna in her recipe. I prefer canned salmon because it's moister, you don't have to worry about mercury and I think it's just a bit tastier. Also, she uses kidney beans, I used black because I had them on hand, but next time I think I will try garbanzo beans. I also excluded the garlic (shocking for me, I know) and added some lemon juice.
10 oz bag baby spinach
12 oz can salmon
1 can garbanzo beans, drained and rinsed
2 ripe avacados, peeled and diced
3 green onions, chopped
1 apple, peeled, cored and diced
1/2 cup non fat greek yogurt
1/2 cup crumbled feta
1 tbs brown mustard
1 tbs honey
2 tbs olive oil
1 tbs lemon juice
salt and pepper
In a large bowl mix together the spinach, fish, beans, feta, avacados, onion, apple and sprinkle with salt and pepper.
I think "nemesis" is a strong word. Why do you dislike her so much?! :)

yeah, you could definitely do it without the meat. the Avocado and cheese make it bulky enough...i was thinking it would be good with some dried fruit, cherries or cranberries maybe...
